Chocolate Fudge Cake


They say save the best for last, and that’s exactly the thinking behind Monteiths new dessert menu. Our naughty selection of decadent desserts has been a massive hit since we launched it with one recipe in particular proving irresistibly tempting.

The chocolate fudge cake has been the star of the show thus far with diners falling over themselves to try this rich, chocolate cake alongside salted caramel popcorn and vanilla ice cream. Our chef has (grudgingly) released his recipe for this fabulous dish – a great option for dinner parties the recipe below serves 8.

Ingredients
• 150g butter
• 150g chocolate
• 150g egg
• 225g sugar
• 65g plain flour
• 25g cocoa powder

Melt the butter and chocolate together and place to one side then whisk the eggs with sugar until they become pale and white. Add the melted butter and chocolate on a slow whisk then fold in the flour and cocoa powder.
Divide into 8 ramekins and place into a  preheated oven (210 degrees) for 12 minutes to achieve a gooey consistency in the middle. Remove and serve with a scoop of ice cream and a handful of caramel popcorn.
