The Ultimate Burger

During the Edinburgh Festival we’re open seven days a week for lunch and our special festival lunch menu has an undoubted star dish on it – our steak burger. The dish has been selling out on a daily basis and we thought it’s make a great addition to our online recipe book.
The key to the dish is great quality meat and the addition of bone marrow which adds a juicy feel to the patty. Check out the recipe below, but remember, if you’d rather eat out during the festival you can get a complimentary Monkey Shoulder cocktail at Monteiths by asking for a cheeky “festival monkey” when booking a table for lunch.


INGREDIENTS


1 kg ground mince beef - preferably done at home using good quality beef or at least 95per cent mince from a butcher
35g English mustard
35g tomato ketchup
70g red onion
15g lea and perrins sauce
1/2 red chilli deseeded
1 clove of garlic
20g bone marrow fat or duck fat

METHOD


Blitz all ingredients apart from the mince to form a paste and then fold into the mince and work well until the mix becomes firm.
Split onto average sized pattys but do not add salt until you are ready to fry as this will keep the moisture inside the meat.
Fry on a medium temperature for 8 minutes before serving in a toasted bun with a slice of melted cheese
