If you like Pina Colada...

Our contemporary take on cocktails isn’t just limited to drinks of a Scottish origin. Over the past few months we’ve been working on a new cocktail list which will feature drinks from across the globe. One of the most far flung drinks on the new list hails all the way from Puerto Rico and is a great summer sipper.

The favourite of holidaymakers the world over, today we’ll share our recipe for a Pina Colada. The drink was created in 1954 at the Caribe Hilton’s Beachcomber Bar and was intended as a signature serve to ‘wow’ the bar’s star studded clientele.

Apparently the drink took creator Ramon “Monchito” Marrera  three months to perfect. This simple recipe should take a lot less time…

How to make a Pina Colada:

1 part Appleton Estate 12 year old rum
1 part Koko Kanu coconut rum
1 1/2 parts full fat milk
2 parts Coco Lopez (sweetened coconut cream)
3 parts Pineapple Juice
1 dash Angostura Bitters

Add 2 pieces of ice and mix in a milkshake maker, single strain into a glass and garnish with a pineapple wedge and cherry.
